Low-Carb Italian Breakfast Casserole



This Low-Carb Italian Breakfast Casserole is packed with flavor and perfect for a keto-friendly breakfast. It's loaded with eggs, spinach, tomatoes, olives, and cheese, making it a satisfying and nutritious morning meal.

Ingredients:

  • 8 large eggs
  • 1/4 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions:

Preheat the oven to 375F 190C

In a mixing bowl, whisk together eggs, heavy cream, garlic powder, Italian seasoning, salt, and pepper

Stir in chopped spinach, halved cherry tomatoes, sliced black olives, and shredded mozzarella cheese

Pour the mixture into a greased 9x9 inch baking dish

Sprinkle grated Parmesan cheese over the top

Bake for 25-30 minutes, or until the casserole is set and the top is golden brown
