With this Easy Roasted Hatch Chile Hummus recipe, you can enjoy the smooth, creamy texture of regular hummus along with the smokey, spicy flavor of roasted Hatch chiles. This dip is great for parties, snacks, or putting on sandwiches!
Ingredients:
- 1 can 15 oz chickpeas, drained and rinsed
- 2 roasted Hatch chiles, peeled, seeded, and chopped
- 2 cloves garlic, minced
- 3 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons water or more for desired consistency
- Optional: chopped cilantro and additional olive oil for garnish
Instructions:
In a food processor, combine chickpeas, roasted Hatch chiles, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper
Process until smooth, scraping down sides as needed
With the processor running, slowly add water until desired consistency is reached
Taste and adjust seasoning if necessary
Transfer hummus to a serving bowl, drizzle with additional olive oil, and sprinkle with chopped cilantro if desired
Serve with pita chips, vegetables, or crackers
